~summer fun? yes, please!~
I was able to kick off my weekend early (thank you Summer Fridays!) which gave me the perfect opportunity to get out and enjoy the beautiful weather. Here are just a few of my weekend highlights…

Last week and this week have been a total blur. In all the chaos, sometimes it’s important for a girl to make time to stop, unwind, and enjoy a nice glass of wine. Now, i must confess, I have always been a red wine girl, with the occasional pinot grigio thrown into the mix (on a hot day). However, I must say that I’ve recently succumbed to rose’. Yes, it’s pink and I’d always associated any pink wine with (gasp!) white zinfandel (my apologies to the zinfandel lovers!). And I have to be honest- I never thought I’d give it a try but it was last summer, while I was staying here that my friend Jacqueline and I purchased a few bottles from here and enjoyed the cool, refreshing, and slightly sweet wine poolside. It instantly became our new favorite for hot summer days. Check out a couple places where I love to buy/enjoy a glass…or two.

I was under the weather all weekend. Lucky for me, my boyfriend was totally awesome and made me endless amounts of tea with honey. By Sunday evening, after some long napping, I was finally feeling better. The restlessness was starting to kick in, so I managed to peel myself out of bed to make these healthy, yummy, muffins which went perfectly with, you guessed it…another cup of tea.
Flax Seed Apple Muffins
1- 1/2 cups whole wheat flour
1/3 cup organic flax seeds
1/2 cup brown sugar
1 tsp ground cinnamon
1/2 tsp sea salt
1 tbsp baking powder
2 apples peeled (1 sliced finely, the other grated)
1 egg (I used a farm fresh one from my boyfriend’s mom’s chickens)
1 tsp vanilla extract
1- 1/2 cups milk
~Mix egg, milk, and vanilla, then add the apples.
~In a separate bowl, mix together remaining ingredients until well blended
~Combine all ingredients into one bowl and mix until moistened
~Fill oiled muffin tins 3/4 way and bake in a pre-heated oven at 350 degrees for 18 minutes

I’ve had an exhausting week so far and it seems as if there simply have not been enough hours in the day to get it all done. Although it’s only Wednesday, I’m totally looking forward to some serious R & R this coming weekend. In the meantime, check out a few things making me happy.
