For me, Saturday was filled with daytime errands and chores. At about 2, I realized that I had yet to eat lunch. I stopped and thought about my leftover roasted veggies from the night before and this is what I came up with…. A surprisingly spicy, healthy lunch on the run and coincidentally, just the right colors for St. Patty’s Day!
